  1. Grate the cauliflower in a food processor until it takes a rice-like shape. You can also use a box grated to do the same. (using 'ready to cook' cauliflower rice is also an option)
  2. Now add 2 and ½ teaspoons of vegetable oil to a large non-stick pan and set it over medium heat. Add the finely chopped bacon for 3-4 minutes. Then transfer it into a plat and keep it aside
  3. Add the two beaten eggs to the oil and put a little amount of salt in it. Almost scramble the eggs 1 minute until it is cooked. Then again take it out from the pan and keep it aside.
  4. Again, add 3-4 teaspoons of oil to the pan and heat the oil on medium heat. Now add the chopped ginger, garlic, and the white portion of the spring onions to the oil and saute it for 2-3 minutes.
  5. Now add the veggies (carrots, beans, and peas) and the cauliflower rice to the pan, stir it for 1 min. Then add the soy sauce, salt as per your taste(preferably ¼ teaspoon), the chopped green chilly, sugar and stir it for another 2 minutes.
  6. Continue cooking the ingredients, until the cauliflower rice is tender-crisp and the vegetables are simmered.
  7. Then, add the fried bacon, scrambled egg, green spring onions, rice wine vinegar, and sesame oil in it and stir gently. Taste it and if required adjust it with more salt or soya sauce.
  8. Lastly, garnish the dish with chopped peanuts for some extra crunchiness.

  • It is easy to cook this recipe with "ready to use '' cauliflower rice, but that can't be a substitute for the fresh one as you don't know when it was produced. So make your cauliflower rice at home by grating the cauliflower and keep your recipe more healthy, and crunchy.
  • While grating the cauliflower using a food processor, don't over-process it. Otherwise, it will be mushy, and you will not get the rice-like shape. So, work in batches and don't hurry.
  • If you keep the cauliflower fried rice in a heated pan for a long time, it will be soggy, so cook the dish promptly over medium heat and take it out from the pan.
  • As you will be adding the soy sauce(which is salty) to the dish, be careful with the quantity of salt you will be adding further.
  • Do not use too much oil while cooking cauliflower fried rice as it can make it oily and unhealthy. You can always use a spray bottle of oil to restrict your oil consumption.
