  1. Preheat the oven to 400°F.
  2. Peel the sweet potatoes and cut them into slices about ½ inch thick and wide. Make sure the potato slices are of equal size.
  3. After slicing the sweet potatoes, place them in a bowl of cold water. Soak the potatoes in cold water for at least 30 minutes. Then rinse and dry with a paper towel.
  4. Transfer the potato slices to the tray with baking paper. Drizzle olive oil over the potatoes. Toss until the fries are coated with oil.
  5. Then mix the cornstarch, salt, pepper and other spices in a bowl. Pour over the potatoes. Toss until all potatoes are covered with spices. Spread the potatoes back on the baking tray in a single row.
  6. Bake the potatoes in the oven for 20 minutes. Then turn the potatoes over and cook for another 20 minutes. This way, both sides will cook equally.
  7. When they are browned, remove them from the oven and let them cool for 5 minutes.
  8. Taste before serving. Add salt, pepper or cayenne pepper if you wish.
  9. Serve hot or warm.
