  1. Place the ricotta in a fine-mesh strainer set over a large bowl to drain. Allow to drain for at least an hour and up to overnight in the refrigerator.
  2. Take heavy cream and ¼ cup powdered sugar and whisk them in a large mixing utensil until firm peaks form.
  3. Then combine ricotta, mascarpone, ¼ cup powdered sugar, vanilla, orange zest, and salt in a separate large mixing bowl. Whip up the cream and fold it in. Refrigerate for at least 1 hour before filling the cannoli.
  4. Combine flour, sugar, salt, and cinnamon in a large mixing bowl. Using your hands or a pastry cutter, cut the butter into the flour mixture until it is pea-sized.
  5. Mix in the wine and egg until a dough forms. To help the dough come together, knead it a few times in the bowl.
  6. Refrigerate for at least 1 hour and up to overnight after patting into a flat circle with plastic wrap.
  7. Divide the dough in half on a lightly floured surface. One half should be rolled out to a thickness of 18 inches. To cut out the dough, use a 4 round cookie cutter. Repeat with the rest of the dough. Cut a couple more circles by rerolling scraps.
  8. Brush egg whites where the dough will meet to seal it together after wrapping it around the cannoli shapes.
  9. Heat about 2 spoons of oil in a big pot over medium heat to 360°. Working in batches, drop cannoli molds into the oil and cook until golden brown, about 4 minutes.
  10. Remove from the oil and place on a plate lined with paper towels. Allow to cool slightly before serving.
  11. In case of air frying, Place molds in an air fryer basket in batches and cook at 350° for 12 minutes, or until golden.
  12. Fill a pastry bag with the filling and an open star tip. Fill shells with filling, then dip the ends in small chocolate chips.
  13. Serve it with powdered sugar.

Tips
