  1. Preheat the oven to 400 °F (200 °C).
  2. Grease the souffle pan or dish with butter. Sprinkle parmesan cheese on top. Set it aside.
  3. Separate room temperature eggs. Separate the whites and yolks of the eggs and place them in a metal bowl.
  4. To make the bechamel sauce, heat the butter in a medium saucepan over medium heat. Add the flour and cook for a few minutes until the consistency thickens. Then add the milk and cook stirring constantly, until the sauce thickens.
  5. Remove from the heat and add the egg yolk and grated cheese. Beat until the cheese melts. Season with salt and pepper to taste. Let it cool.
  6. Beat the egg whites in a stand mixer until stiff peaks form. Add salt to the egg white and fold the ingredients together.
  7. Add one-third of the egg white mixture to the cheese mixture. Fold the ingredients with the help of a spatula. Then gently fold the remaining egg whites into the souffle dough.
  8. Put the batter mixture in the soufflé dish. Be careful not to completely fill the mold. Bake for about 25 minutes, until the soufflé is puffed up and golden brown. Insert a toothpick to check if the souffle is cooked. If the toothpick comes out clean, the souffle is cooked.
  9. Serve immediately.
