  1. In a mixing bowl, add the soy sauce, oyster sauce, sesame oil, sugar, and cornstarch. Mix all the ingredients thoroughly. Set the sauce aside.
  2. Boil water in a large pot and add 1 tablespoon of salt. Add the noodles and cook until al dente, about 2 minutes.
  3. Drain the noodles and rinse them thoroughly with cold water.
  4. Put the noodles in a bowl and mix them with 1 tablespoon of oil.
  5. Heat 2 tablespoons of canola oil in a large wok or nonstick skillet. Add the onions and garlic. Saute for a few minutes until the onions are translucent.
  6. Chop the vegetables julienne.
  7. Add the mushrooms and sauté until lightly browned. Then add the bell pepper, cabbage, and carrot. Cook until the cabbage is mostly wilted.
  8. Add the soy sauce mixture and noodles.
  9. Add the bean sprouts. Season with salt and pepper to taste. Cook the ingredients for a few minutes.
  10. Put the chow mein in serving bowls. Serve hot with green onions and sesame seeds.
