  1. Preheat the oven to 400 °F. Grease a large casserole dish with butter or cooking spray.
  2. Drain the creamed corn and canned corn using a colander and rinse with cold water.
  3. Next, melt the unsalted butter in a saucepan over low-medium heat. Add the cornstarch or flour to the pot and cook for 1-2 minutes.
  4. Slowly add milk to the mixture. Add sugar, salt, and pepper and cook, stirring constantly, until the mixture has a smooth consistency. When the mixture thickens, remove the saucepan from the heat.
  5. Add the creamed corn and canned corn to the mixture and stir to combine.
  6. Separate the yolk and white of the egg.
  7. Lightly whisk the egg yolks and add them to the corn mixture.
  8. Lightly whisk the egg whites in a separate bowl and gradually add them to the corn mixture. Fold the mixture, adding ⅓ of it each time.
  9. Then transfer the mixture to a 9 x 13 inch casserole dish. Bake for 1 hour or more, until golden brown.
  10. Remove the pudding from the oven and let it cool for 10 minutes.
  11. Serve it hot or cold.
