Directions

  1. Place all the filling ingredients mentioned above in a bowl and mash them to make a perfectly smooth mixture. You may leave the prawns in chunk form rather than crushing them completely.
  2. Lay down the wonton wrappers and fill in the filling, about 1-2 teaspoons for each wonton. Wet the edges of the wonton with water and wrap it around the filling, pressing out all the air.
  3. Place the wontons in a lid as you work through the soup to prevent the wontons from drying out.
  4. Next, put all broth ingredients - 3 cups chicken broth, 2 garlic cloves, 2 tablespoon light soy sauce, 2 teaspoon sugar, 2 tablespoon Chinese cooking wine, ½ teaspoon sesame oil - in a pan over high heat. Bring it to a simmer and then reduce the heat to medium. Simmer for 5-10 minutes, then remove garlic and ginger and transfer to bowls.
  5. Boil water in a pot and put the wontons in it for about 4 minutes. Take them out once they start to float and add to the soup bowls.
  6. Enjoy your meal!

Tips

  • To prevent the wontons from drying out, keep their skin covered.
  • To keep the wontons from falling apart, keep their fillings small and avoid big wontons. A good measure, in this case, is 1 teaspoon of filling for each wonton.
  • To keep the wontons from falling apart in the soup, steam them first and then place them in the broth. Steaming also prevents the wontons from overcooking.
  • Peanut oil is the recommended choice of oil for cooking wontons as it doesn’t burn easily. However, vegetable oils like canola and corn oil are fine too.
  • To make the wontons stick together, wet the edges of the wrapper by dipping your fingers in water and then moistening the wrapper. Next, fold the wrapper into a triangle shape and press to remove any air bubbles and seal it well.
  • It’s better to use store-bought wonton wrappers for this recipe, as homemade wrappers might turn out thin and may take more time. However, both the yellow and white wrappers are fine.
  • Instead of using water in the meat filling, use an egg. The egg will hold the wonton filling better and keep it from drying out. To have a fluffy filling, stir it in one direction for 4-5 minutes until the texture is sticky. If you are not in a rush, you can store this sticky filling in the fridge for about 15 minutes.
  • Wontons might get damaged if you freeze them. If there is some leftover, and you want to freeze it, keep the wontons in a tray or a pan where they are not touching each other to make sure they don't stick and lose shape. Put this tray in the freezer, and once frozen, transfer it to a plastic bag for storage.
