Tips

  • When wrapping the egg rolls, make sure you roll them tightly to prevent oil from getting into them.
  • The oil should be very hot. It should be at least 350 °F.
  • Never crown the frying pan when frying the egg rolls. Fry them in small batches.
  • The filling should be at room temperature when you fill the egg rolls.
  • Egg roll wrappers can dry out faster. So, cover them with a damp cloth. The same goes for finished rolls to prevent them from drying out.
  • Place the egg rolls on a cooking rack first and then on the kitchen towel. This way, the excess oil will leave the egg rolls, and they will turn crispier.
  • You can use chicken, beef, or turkey meat in the filling. You can also use shrimps.
  • You can also try these egg rolls by adding your favorite vegetables. Bean sprouts, bell pepper, and mushrooms taste good as well.
