Macarons

  1. To make the macarons, add the confectioners' sugar and the almond flour into a bowl.
  2. Place the egg whites at room temperature into a separate and very clean bowl.
  3. Whisk the egg whites with an electric beater. Add cream of tartar once they begin to form foam. Then gradually add in the granulated sugar.
  4. Add in vanilla and keep whisking until stiff peaks start to form. If you want to, you can add in color at this point as well.
  5. Take ⅓ of the dry ingredients and start folding them in with the whisked mixture.
  6. Slowly keep adding the rest of the dry ingredients and fold them in as well.
  7. The final mixture should be thick and flowy and should not have cracks. Put this mixture into a piping bag with a medium-sized piping tip.
  8. Have a baking sheet ready with parchment paper fitted in, and pipe one-inch dollops onto the baking sheet. Tap on the table to release any trapped air bubbles. Keep them sitting for 40 minutes before popping them in the oven.
  9. Keep the oven at 300 °F and bake for 10-15 minutes. Make sure to rotate the tray after 5-6 minutes. Let them sit and cool before taking them off the baking sheet.

Buttercream

  1. For the buttercream, heat water and sugar at medium heat and then bring it to a boil.
  2. Beat egg yolks thoroughly and keep the mixer running. Pour the water and sugar syrup into the bowl of egg yolks slowly.
  3. Keep mixing until the mixture is at room temperature. Add butter cubes one by one, and then add vanilla and salt. Mix for 5-6 minutes, or until the mixture is smooth and creamy. Add color if desired.
  4. Put the buttercream and cookies together to assemble delicious French macarons and enjoy!
