  2. Add 2/3 of the olive oil, yogurt, lemon juice, lemon zest to a mixing bowl in a water glass, and then mix.
  3. In another bowl, mix gluten-free flour, gluten-free oats and brown sugar and add to the mixture with yogurt.
  4. Then knead the mixture until it has a soft consistency.
  5. Then, when the dough becomes thick, shape it in a round form.
  6. Mix the ingredients to sprinkle the grated coconut and the zest of lemon on top.
  7. Dip the cookies in the coconut and lemon mix and place them on a baking sheet with greaseproof paper.
  8. Cook for 10-15 minutes until golden.
