Directions

  1. To make your own homemade ice cream, start by adding 4 egg yolks and 1/2 cup of granulated sugar to a medium-sized saucepan. Whisk until well combined and light yellow in color.
  2. Add the cup of whole milk to another small-sized saucepan and transfer to medium-low heat. Do not stir and heat until it just starts simmering.
  3. Gradually add this heated milk to the egg and sugar mixture while stirring constantly and heat until the mixture reaches 165 °F. Do not allow the mixture to boil, and take the saucepan off the heat as soon as it reaches the correct temperature.
  4. Pour the custard base of heated milk, eggs, and sugar into an airtight storage container and leave it in the fridge until its temperature falls to 65 °F.
  5. Add a cup of heavy cream and 2 teaspoons of vanilla extract to this cooled custard base and stir.
  6. Pour the resulting mixture into your ice cream maker, process according to model instructions, and enjoy the homemade ice cream in a cone or bowl.
  7. Serve it with fresh berries or chocolate sauce.

Tips

  • To make the best vanilla ice cream, try to use organic milk and cream, free-range eggs and pure vanilla extract, and make sure everything is as fresh as possible.
  • If you don’t have pure vanilla extract, use high-quality vanilla bean paste instead.
  • Don’t skimp on the fat. Ice cream’s high-fat content is essential for its creamy texture, and using low-fat versions of the ingredients will result in ice cream that will get icy and gritty in the freezer.
  • Getting the temperature exactly right is essential for making good ice cream. Invest in an instant-read thermometer for best results.
  • Whisk the custard mixture frequently while heating to prevent the egg from scrambling. If it still happens, strain the mixture through a fine-mesh sieve and beat air back with a hand mixer.
  • The custard needs to be chilled in the refrigerator before being processed in the ice cream maker. Use a thermometer to periodically check the temperature until it reaches 65 °F, or leave the mixture to cool overnight for an ultra-creamy and smooth ice cream.
  • Reduce the chances of your ice cream getting hard and icy when stored in the freezer by adding in fruit liqueur, vodka, sugar, corn syrup, honey, gelatin, or a commercial stabilizer. Store in a shallow container and cover the surface with plastic wrap.
  • Any flavorings like extracts or alcohols should only be added once the custard base has cooled. Adding flavorings to hot custard will result in the flavors deteriorating and becoming less pronounced.
  • When adding mix-ins like candy pieces, nuts, and cookie crumbs, make sure the pieces are about the size of a chocolate chip and pre-chilled. Add the pieces only once the ice cream is already frozen, and incorporate by processing for about a minute or so in the ice cream maker.
  • There are many different types of ice cream machines like hand crank, electric crank, freezer bowl, and ice cream compressor. This recipe works with all of them.
  • If using an ice cream maker with a freezer bowl, freeze the bowl 24 hours before making the ice cream. This will ensure the bowl is cold enough to freeze your ice cream quickly and efficiently.
  • Another important step for ice cream makers with freezer bowls is to turn the motor on before pouring in the ice cream base. This will prevent the ice cream from freezing into a chunk upon contact.
  • Make ice cream without an ice cream maker by heating 2 extra-large eggs, 4 extra-large egg yolks, 1/2 cup sugar, 1/4 tsp salt, vanilla seeds, and an empty bean to 160 °F in a double boiler (10 minutes). Transfer to an ice bath, remove the vanilla bean and fold in one cup heavy cream, 2 tbsp sugar, and 1 tsp vanilla extract. Cover with plastic wrap to prevent skin formation and freeze for 4-6 hours.
  • This homemade vanilla ice cream recipe yields about a quart of ice cream. You can change the amount of ingredients to make more or less ice cream.

What Ingredients Make Ice Cream Creamy?

The two main ingredients that provide the creamy texture to ice cream are milk fat and egg yolk. Both of these are high in fat and increase the fat content of the ice cream to result in a richer and creamier texture. Egg yolks also contain lecithin, which is an emulsifier and binds fat and water together to make a creamy emulsion.
