Ingredients

  • 6 tablespoons of butter
  • 16 ounces of marshmallow
  • 7 cups Kellogg’s Rice Krispies Cereal

Directions

  1. Grease a large mixing bowl with butter or baking spray and pour in the cereal.
  2. Melt the butter in a medium-large saucepan, set over low heat, and stir in the marshmallows.
  3. Continue to stir often until about 75% of the marshmallows are melted.
  4. Remove the pan from the heat and stir vigorously using a rubber spatula or the back of a wooden spoon till all the marshmallows are melted and smooth.
  5. Pour the melted marshmallows over the Rice Krispies Cereal and toss to evenly coat. You can also stir in the Rice Krispies cereal. Both methods work fine.
  6. Spread the mixture into a 9-inch by 13-inch pan greased with baking spray or butter and gently press into an even layer.
  7. Allow the cereal treats to cool for about 30 minutes and then cut into 18 rectangles.

Tips

  • Use European salted butter for a richer flavor and texture as European butter has a higher butterfat content (around 82%) than American butter.
  • Use Jet-Puffed Marshmallows for the perfect amount of sweetness and stickiness. Other brands of marshmallow tend to be too sticky and dense (although you can use more cereal to offset that).
  • Keep the marshmallows from getting too hot as that will result in hard, rather than chewy, rice krispie treats. Also, be careful not to overheat the marshmallows to prevent burning.
  • Make sure all the marshmallows are fully melted, as whole marshmallows will make the treats overly sweet and gummy.
  • If your marshmallows aren’t fully melted even after vigorous stirring, you can heat them again to properly melt them.
  • Take extra care to get the perfect balance of ingredients. Too much cereal will make the treats dry, too much marshmallow will make them sticky and overly sweet, and not enough butter will make them bland.
  • The rice krispie treats should neither be too thin nor too thick for the perfect flavor, texture, and crunch.
