Directions

  1. Slice the beef into thin strips. Season with salt and black pepper to taste.
  2. To marinate the meat, mix 1 teaspoon of olive oil, 1 teaspoon of soy sauce, and 1 tablespoon of cornstarch in a bowl. Cover the beef with marinade and marinate the meat for 1 hour. After marinating, the beef should still be fairly moist. If it is too dry, add a tablespoon of water to it.
  3. Heat the olive oil in a large skillet over high heat. Spread the steak pieces evenly across the wok, just before the oil itself begins to smoke in any way. Sear on high heat for about 1 minute, and then flip. Cook the other side for 30 seconds.
  4. Drain any excess oil from the pan. Heat the remaining oil over medium-low heat. Add ginger and garlic. Stir until the garlic is just fragrant. Then add soy sauce, water, and brown sugar. Boil the ingredients.
  5. Combine sauce and meat in a skillet. Add the green onions and continue to simmer until the sauce is thick enough to cover the back of a wooden spoon.
  6. Serve hot.

Tips

  • Flank steak is perfect for this recipe. You can also use New York strip steak if you can't find flank steak.
  • Slice the beef thinly. This allows the meat to cook better and quicker.
  • For easier cutting, place the meat in the freezer for about 20 minutes before slicing. Cut the meat along the grain into 1/4-inch thick slices. The meat may be tough if you cut the fibers.
  • Avoid overcooking as the beef is very thin. Otherwise, the edges of the meat will cook quickly and burn.
  • Make sure the pan is hot.
  • Do not overfill the pan. Arrange the veal in a single row in the pan. This ensures that the meat cooks evenly and quickly.
  • Add cornstarch to thicken the meat sauce.
