  • Smoked Salmon & Cream Cheese Topping
  • 1/4 cup cream cheese, softened
  • 2 ounces smoked salmon, sliced
  • 1 teaspoon capers
  • 1 teaspoon fresh dill

Directions

Prepare the Sushi Rice

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine rice and water, then bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Remove from heat and let it sit for 10 minutes.
  3. In a small bowl, mix rice vinegar, sugar, and salt. Stir until dissolved, then drizzle over the rice, mixing gently to coat.

Shape and Chill the Rice

  1. Line a baking dish with plastic wrap and press the warm sushi rice evenly into it, about 3/4 inch thick.
  2. Cover and refrigerate for at least 1 hour, or until firm.

Fry the Crispy Rice

  1. Once chilled, remove the rice from the dish and cut it into bite-sized squares or rectangles.
  2. Heat vegetable oil in a pan over medium heat.
  3. Fry the rice pieces for 2-3 minutes per side, until golden brown and crispy. Remove and place on a paper towel-lined plate.

Assemble the Sushi Bites

  2. Spoon the topping onto each crispy rice piece.
  3. Garnish with sesame seeds, green onions, or a drizzle of soy sauce.

Tips

  • Use sushi-grade rice. Short-grain sushi rice is ideal because it’s naturally sticky, helping the rice hold its shape when fried.
  • Chill the rice properly. After shaping the rice, refrigerate it for at least 1 hour to firm up. This prevents it from falling apart during frying.
  • Wet your hands when shaping. Lightly dampen your hands with water when pressing the rice into the dish to prevent sticking.
  • Cut with a sharp knife. A sharp knife makes it easier to slice the rice into clean, even pieces without crushing it.
  • Fry in small batches. Avoid overcrowding the pan so that each rice piece crisps up evenly. Fry them in batches of 3-4 at a time.
  • Use neutral oil for frying. Opt for oils like vegetable oil, avocado oil, or canola oil, which have a high smoke point and won’t overpower the flavors.
  • Flip gently. Use tongs or a spatula to flip the rice carefully so it stays intact and gets evenly crispy.
  • Experiment with toppings. Customize your bites with crab salad, shrimp, tofu, or spicy mayo for different flavors.
  • Garnish for extra flavor. Sprinkle sesame seeds, green onions, nori strips, or a drizzle of soy sauce for an extra burst of flavor.
  • Serve immediately. The best crispy rice sushi bites are enjoyed fresh while the rice is warm and crunchy and the toppings are cool and flavorful.

The Origins of Crispy Rice Sushi

Crispy rice sushi has become a trendy appetizer in many sushi restaurants, but its origins are inspired by traditional Japanese and fusion cuisine. While classic sushi rice is typically served soft and at room temperature, the idea of frying or crisping the rice adds an extra layer of texture and flavor. This concept is believed to have been popularized by Nobu Matsuhisa, a world-renowned chef who introduced crispy rice sushi as a signature dish in his upscale Japanese restaurants. Since then, crispy rice sushi has become a favorite among sushi lovers who enjoy the contrast of crunchy rice with creamy, flavorful toppings.

Why Crispy Sushi Rice is a Game Changer

The magic of crispy sushi rice lies in its balance of textures. The exterior becomes golden and crunchy, while the inside remains soft and sticky, making it the perfect base for sushi toppings. Unlike traditional sushi rolls, crispy rice sushi allows for a more creative and versatile presentation. Toppings like spicy tuna, avocado mash, and smoked salmon add a delicious contrast to the warm, crispy rice. This makes it an ideal dish for sushi enthusiasts who want to enjoy something unique but still rooted in classic Japanese flavors.

How To Store Rice Sushi Bites?

Crispy rice sushi bites are best enjoyed fresh, but if you have leftovers or want to prep them ahead of time, here’s how to store them properly while maintaining their flavor and texture.

Storing Crispy Rice

Refrigerate: Place the fried crispy rice pieces in an airtight container lined with parchment paper to prevent sticking. Store in the refrigerator for up to 3 days.

Reheat Before Serving: To restore the crispiness, reheat the rice bites in a skillet over medium heat for 2-3 minutes per side or bake them at 350 °F (175 °C) for 5-7 minutes. Avoid microwaving, as it makes them soft instead of crispy.

Storing Toppings Separately

Seafood-based toppings (spicy tuna, salmon, crab): Store in a separate airtight container in the fridge for up to 24 hours for maximum freshness.

Avocado-based toppings: Since avocado browns quickly, mix in some lemon or lime juice and cover with plastic wrap before refrigerating. Best used within 12-24 hours.

Vegetarian toppings (mushrooms, tofu, kimchi, etc.): Store in an airtight container for up to 3 days.

Can You Freeze Crispy Rice Sushi?

  • Fried crispy rice pieces can be frozen for up to 1 month.
  • To freeze, place them in a single layer on a baking sheet, freeze until solid, then transfer to a ziplock bag.
  • To reheat, bake at 375 °F (190 °C) for 10-12 minutes or pan-fry until crispy.

By storing crispy rice and toppings separately and reheating properly, you can enjoy crispy rice sushi even after a few days!

Crispy rice sushi bites bring together the best of sushi flavors with an exciting crunchy texture. Whether you choose spicy tuna, creamy avocado, or smoked salmon, these bite-sized delights are perfect for sushi lovers looking for something new.

Try these crispy sushi bites at your next gathering, and let your guests mix and match their favorite toppings. With endless customization options, they’re bound to be a hit!
