  1. For the curry paste, cook the spice seeds in a small skillet over medium heat. Fry the pan for 1-2 minutes, until the spices are a little darker and more fragrant than before.
  2. Let the spices cool completely and then grind them into a fine powder using a spice grinder or a mortar and pestle.
  3. Add the cumin and coriander along with the other curry paste ingredients to the bowl of a food processor. Continuously scrape the sides of the bowl while operating the food processor to smooth the mixture. Put the curry paste in a container with a lid and store it in the refrigerator until you need it.
  4. In a large skillet, cook the shallot over medium-high heat for 1 minute. When it smells a little, add two heaped tablespoons of green curry paste and cook for 1 more minute.
  5. Add ¼ cup of coconut milk, making sure to mix the mixture well in the pan.
  6. Add the chicken to the skillet and then add the peppers and green beans. Cook the mixture for 20 minutes on medium-low heat. Then stir in the cilantro and basil.
  7. Serve over steamed rice and garnish with some lemon wedges.
